sorry, didn't mean to imply that you didn't know where the coolant goes. It's just hard to guess everyone's mechanical apptitude over the internet. This is very helpful information. So it was leaking before? then it probably is a leak, and not just a spill.
can you see it run out when the engine is idling? Probably not or you'd see the leak.
You can pull the thermostat housing, and replace all the fun stuff in there. including the new thermostat and all OEM gaskets it'll probably run you about 80 dollars.
I have an NA thermostat housing sitting on my kitchen table at home. I'll snap some pics of it tonight.
... and despite what everyone else around here says, there is a thermostat gasket.

eh, with most cases of stuttering, it can be fixed with 6 new copper spark plugs for a grand total of about 8 bucks and 45 minutes of your time.
after that we move to plug wires
fuel filter
check the MFI relay and ECU
coils
but all these are just internet guesses, as it helps to hear the car run, (or attempt to) and then go from there.
